Makes a lot of servings, so you could probably scale it down if wanted, but on the other hand this reheats better than anything else I’ve tried so leftovers can last for days
Cut a link of kielbasa or andouille, andouille tastes a bit better.
Put in pot with a tablespoon canola oil at medium temperature. Brown it for few mins.
Add 2 and 1/2 cups white rice and 2 teaspoons of garlic, then stir and brown for a minute.
Add 5 cups of liquid- at least 50% chicken broth (can substitute for appropriate amount of chicken bouillon) and the rest water. Add 2 tablespoons of chili powder and can of red beans drained. Turn on high, put on lid, bring to a boil.
Once boiling, turn down to 2. Then ~20 min or when water has cooked away.
Personally I top it off with some cheddar cheese and hot sauce but that’s completely optional, diced jalapeños also taste good
