I feel like pancakes are going to happen, predominantly, at the first contact between OL and DL. It seems unnatural for a blocker and a rusher to be going at it for a couple seconds and then suddenly he gets pushed over. I'm not sure if there's much of a difference.
Maybe this will open up a door for a stats article about relation of Pancakes to Pass%, and Sacks Allowed to Pass%.
